What’s Cooking Wednesday – Savory Cheese Muffins

It’s no secret that I love to bake and not just cake and cookies. I have a passion for bread and savory treats too. This week’s What’s Cooking post features a recipe of my own that I have tweaked to perfection in the Sam family kitchen.

Savory Cheese Muffins

  • 2 cups all purpose flour
  • 1/4 cup granulated sugar
  • 3 tsp baking powder
  • 1/2 cup grated cheese (medium cheddar or marble are good choices)
  • 1/4 cup of sliced green onions
  • 2 eggs
  • 1 cup buttermilk
  • 1/4 vegetable oil

In large mixing bowl, stir together flour, sugar, baking powder, cheese and green onions. Mix well and set aside. In a separate bowl, beat together eggs, buttermilk and vegetable oil. Pour the liquid ingredients into the flour mixture. Stir gently until just blended. Do not over stir or your muffins will turn out hard and dry. Scoop batter into 12 paper lined muffin tray. Bake in preheated 400F oven for 12-15 minutes or until tops are just turning golden brown.

Carefully remove muffins from tray (they are hot!) and let cool on wired rack. Enjoy while you can because they won’t last long!

These yummy muffins are easy and quick to prepare. They are perfect for breakfast, lunch or snack. My kids love to eat these after school. Even my dad who hates cheese will eat not just one, but two muffins – especially when they are fresh out of the oven!
