This week’s featured recipe is Quinoa and Chickpea Salad. Quinoa, pronounced “Keen-Wah” is all the rage these days and being a lover of grains and lentils, I decided to give this recipe a try. This is yet another no-fail recipe by Canadian Living. The original recipe pairs the salad with a tomato vinaigrette. I opted to use organic Italian vinaigrette that I had in the fridge.
Quinoa and Chickpea Salad
- 1 cup quinoa rinsed
- 2 cups green beans , trimmed and chopped
- 1 can (540 ml) chickpeas drained and rinsed
- 1 sweet red pepper diced
- 1 cup crumbled feta cheese
- Italian vinaigrette dressing
In saucepan, bring quinoa and 2 cups water to boil; reduce heat, cover and simmer for 12 minutes. Fluff with fork and let cool. Meanwhile, in saucepan of boiling salted water, blanch green beans until tender-crisp, about 3 minutes. Drain and refresh in bowl of ice water. Drain and transfer to large bowl. Stir in cooled quinoa, chickpeas, red pepper and feta cheese.
The salad turned out great. I served the salad with beef souvlaki – YUM! My kids are not that adventurous when it comes to food but they LOVED the quinoa. I would definitely make this salad again because getting kids to like “healthy” food can be such a challenge. Overall the Quinoa and Chickpea Salad recipe was easy to prepare, had a nice texture and was pleasing to our the whole family’s taste buds.
