The Best Banana Bread Recipe

What’s Cooking Wednesday

Hello and welcome to my weekly column about what’s cooking in the family  kitchen. If you just discovered my blog, then it’s most likely because you were searching for a banana cake recipe. Banana chocolate chip cake to be exact. How do I know that you’re searching for a banana cake recipe? Why, I have super powers of course. Totally kidding, I don’t have super powers but I do have blog stats that come in handy once in awhile.

I’ve been blogging for over a year now and the keyword searches that provide me the most traffic are as follows:

banana chocolate chip cake

chocolate chip banana cake

So what does that mean? In a nutshell, it means the most popular post out of my entire blog is my take on Ponderosa Cake, also known as Banana Chocolate Chip Cake.

If sinfully rich banana cake isn’t your thing, then how about a nice traditional banana bread recipe instead?

“Best banana bread ever!”

I made this banana bread last week and it was devoured by my kids, parents and my husband.

The Best Banana Bread Recipe

Ingredients:

  • 2 1/2 cups all purpose flour
  • 3 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup vegetable or canola oil
  • 3/4 cup sugar
  • 3 eggs
  • 1 1/3 cups mashed bananas

Directions

Preheat oven to 350F. Sift together flour, baking powder, baking soda and salt. Set aside. In large bowl, beat sugar, eggs and oil. Add mashed bananas and beat until well incorporated. Gently beat in flour mixture until smooth. Place batter in a greased loaf pan (9 x5). Bake for 1 hour.

This recipe yields one sky high loaf that is chock full of banana flavour. It is moist with a traditional quick bread texture.

So, what’s cooking in your kitchen this Wednesday?
