Cinnamon Bun Muffins

Who needs cupcakes when you have decadent muffins such as these? Cinnamon Bun Muffins. One quick glimpse at the recipe convinced me I had to make these for this week’s What’s Cooking Wednesday post. Cinnamon? Yum! Brown sugar? Even better. Carbs? Sold.

Funny enough, I found this recipe in The Vancouver Sun’s weekly Food section which also happens to fall on Wednesdays. In the article, Karen Barnaby mentioned people’s fear of letting their kids cook. I’m not one of those people. Not when it comes to baking anyhow.

My oldest has been stirring and counting scoops of flour, sugar and eggs since she was little. Now that she’s in school, her younger sister has taken over the position of assistant baker.

Our first attempt at making the muffins resulted in some chaos. I followed the recipe and instructions very closely. Despite some vigorous swirling, most of the brown sugar and cinnamon ended up melting all over the muffin pan during baking and straight down to the  bottom of my oven. This of course, led to some very charred sugar which in turn, set off the smoke alarm in our house.

Thankfully the muffins survived.

My muffins don’t look as nice as Chef Barnaby’s but they tasted pretty good. I’m not really sure what I did wrong. The photo of Barnaby’s muffins look so neat with the cinnamon and sugar on top. They actually can pass for mini buns. Mine on the other hand, just look like sticky muffins.

Barnaby suggests baking the muffins in an 8 x8 pan. I think I’m going to try this next time. The dough is very “elasticky” and hard to drop into the muffin cups. I also want to avoid another messy post baking clean up.
