A Taste of My Old Life

Fresh, homemade Banana Blueberry Muffins. A sign that things are slowly returning to normal in my household. After 6 weeks of sleep deprivation, I have finally managed do something other than feed, change and hold my baby girl. The little bundle of joy who normally refuses to be put down for a nap, decided to take a 1.5 hour snooze in the morning; giving me enough time to conjure up a baked treat for her big sisters.


Banana Blueberry Muffins

Ingredients:

  • 3 large ripe bananas
  • 2 eggs
  • 1/3 cup oil
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1 1/4 cup all purpose flour
  • 1/4 cup whole wheat flour
  • 1/3 cup sugar
  • 2 tsp baking powder
  • 1 cup blueberries

Directions:

In a large bowl, mash together bananas with baking soda. Whisk in eggs, oil and vanilla and set bowl aside. In separate bowl, stir together flour, whole wheat flour, sugar and baking powder. Gently stir in blueberries. Add banana mixture and stir until just mixed together. Spoon evenly into well greased or paper lined muffin pan. Bake in middle of preheated 375F oven for 20. Remove from oven and let tray stand for 2 min before removing muffins and allowing to cool completely on wired rack.

It might seem silly but just having a bit of time to do something as mundane as baking is a stress relief for me. Hopefully as baby girl grows, she will feed and sleep better, allowing me time to start up my projects again! Enjoy these muffins. Until next time, happy baking!
